5 Sentidos Cuishe-Tio Tello

Tasting Profile: Marzipan, amaretto, roasted pineapple, fruit leather like raisins, velvety
This small, California-only batch of wild-harvested agave Cuishe, (A. Karwinskii), also known as "Bicuishe" in neighboring villages, is one of the first batches made by master palenquero Eleuterio Perez Ramos that 5 Sentidos has exported to an international market. Eleuterio, who is also known as "Tio Tello," harvested the ripe agaves in Miahuatlan de Porfirio Diaz, Oaxaca. Post harvest, he roasted the agaves in a conical oven with mesquite firewood for at least four days. After cooking the agaves, Tio Tello, along with firends and family members, chiopped the agave into small pieces with a machete, and then mashed them with large hammers made of mesquite in a wooden trough. Once mashed, Tio Tello allowed the mash to ferment with well water in cypress sabino tanks. He then distilled the fermented mash in a single copper alembic style still at his small palenque in El Nanche, Oaxaca. Adjusted with heads, hearts and tails. Approximately 210 liters produced. Distilled in March 2007, bottled January 2021.
In 2015, El Destilado was started. Two young guys, Jason Cox from opposite sides of the United States met in Oaxaca, where they were drawn to the vibrant colors, culture, food, and of course, mezcal. As a friendship developed, so did a plan: Scour the Mexican countryside in search of delicious and obscure mezcals, and serve those spirits in a small mezcaleria. That mezcaleria eventually evolved into a highly-acclaimed 32-seat restaurant, and coveted bottles of their nano-batch spirits began making their way to restaurants, bars, and spirits enthusiasts' personal collections outside of Mexico.
Eventually, it became time to share a selection of El Destilado's agave spirits with a broader audience. We at El Destilado bring that selection to you in the form of Cinco Sentidos: a project that aims to highlight the various production processes, agave diversity, and talents and traditions of the amazing people who make the spirits with rigor and esteem. Cinco Sentidos does not blend, age, or otherwise alter the spirits from their original form.
