Dont call this an espadin, the angustifolia that grows in Sonora is quite a bit different than say Oaxaca, most Bacanora producers refer to Angustifolia growing in Sonora as "Pacifica". Typically, Bacanora is distilled in drums that are converted into stills. Bacanora typically has a salty taste and finishes with an interesting mint quality. Its expensive because there is not a lot of agave to go around in Sonora and the batches are very small, 20-40 liters usually. The Pacifica agave is harvested anywhere between 7-9 years and is fermented for 8-10 days and is distilled twice. The packaging will show an old man face within a deer, this is a symbol of the Yaqui People who are an Aztec Indian group who produce the Bacanora. The deer is a symbol of their tribe and and the Yaqui Dance ceremony they are famous for. It is unknown how long these people have been making Bacanora in part because it has been so long.
