A rare chance to taste agave “Espadillon,” this yet to be scientifically identified plant was one of the main agave varieties used for mezcal production in the Mixteca Alta before eventually being supplanted by government-introduced Espadín in the 1970s. Emmanuel Ramirez and his family are one of the few families in the region to still cultivate this variety that can take up to 14 years to reach maturity, and this expression is possibly the first Espadillon to be exported to the U.S. Intensely aromatic and slightly feral, this 140-liter batch demands to be sipped slowly.
