5 Sentidos Mixteca Collection Papalome Edition 4
This 216 Liter 100% wild-harvested batch of Agave Papalome was harvested by husband-wife mezcalero duo Atelo Ramirez and Laura Arriaga in Los Reyes Metzontla, Puebla.
Atelo harvested 263 Papalome in the Mixteca Poblana region, and whit help from friends and neighbors, he roasted them in an underground over for fire days with mesquite as firewood and pirúl leaves as an insulator. After the roast, he crushed the cooked agave into a fermentable mash by using wooden mallets, then allowed that mash to dry-ferment for five days before adding spring water to it, then allwed it to ferment for an additional 12 days. Once he deemed fermentation to be complete, Atelo and Laura slowly doublt-distilled the mash in their small palenque with a hybrid still made from galvanized steel, a clay pot, and a copper serpentine. 216 total liters produced in March 2023. Proofed by Atelo with heads, hearts and tails. Rested in glass demijohns for one year prior to bottling in June 2024.

"La Coleccion Mixteca" is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcalero's interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from this collection will be used for Palenque improvement projects. Series 2025
