The agave picked for Calle 23 is grown in the Highlands (Los Altos) of Jalisco, between the town of Tepatitlan and Arandas. It's double-distilled in stainless steel pot stills and completely unaged. Note: the master distiller, Sophie Decobecq, one of the few women distillers in Mexico, is a former bio-chemist who previously worked in the South African spirits industry.
