Method: Cooked in underground ovens, hand-milled with axes, naturally fermented in wooden vats using mountain spring water, and double-distilled in traditional Filipino-style stills.
Capón Process: Agaves often undergo the capón method where the reproductive stalk (quiote) is cut, but the plant is left alive in the ground for over 3 years to concentrate sugars.
