Chacolo Ensamble 3 Agaves is a distinctive agave spirit from Zapotitlán de Vadillo, Jalisco, crafted by Maestro Tabernero Don Macario Partida Ramos. This expression is an "Ensamble" of three specific agave varieties: Lineño, Cimarrón, and Ixtero Amarillo. 

Produced using traditional methods, the agave is cooked in an underground stone oven, hand-milled with wooden mallets, and fermented naturally in stone vats with spring water. It undergoes double distillation in a Filipino-style still featuring a parota wood trunk. 

Tasting Notes

• Aroma: The nose opens with a deep minerality and the scent of wet earth, characteristic of the volcanic terroir of southern Jalisco. These notes are layered with the bright, vegetal aroma of fresh green herbs and a subtle, floral sweetness from the Ixtero Amarillo agave.
• Palate: This 48.8% ABV spirit delivers a robust, complex texture. You will find a balance of roasted agave sweetness and savory, peppery spice. The Lineño and Cimarrón varieties contribute structure and a slight citrus zest, while the Ixtero Amarillo provides a creamy mouthfeel with hints of tropical fruit.
• Finish: The finish is exceptionally long and clean, marked by a lingering salinity and a delicate, woody dryness from the parota still.
