Derrumbes was a project started by Esteban Morales to help showcase the complexities not only of agaves across Mexico but also how terroir and different productions can play a role into the different flavors you taste. Derrumbes is a great way to learn all those different subletes that lead to all the complexities of each of the mezcales in this collection.
