This ensemble mezcal combines the delicate, floral nature of Tobalá (a. Potatorum) with the herbal, earthy qualities of Bicuishe (a. Karwinskii), resulting in a balanced and nuanced spirit. On the nose, it reveals aromas of roasted agave, tropical fruit, and earthy minerals, complemented by citrus zest, green herbs, and a subtle hint of smoke. The palate is complex and layered, offering flavors of cooked agave, dried fruit, and peppery spice. It finishes long, slightly nutty, and smoky, with lingering mineral undertones. Crafted in Oaxaca, this mezcal is cooked in an earthen pit using mesquite and oak wood, crushed by tahona. It undergoes open-air fermentation in wooden vats with wild yeast, is twice distilled in clay pot stills, and uses natural spring water throughout the process.

About the Distillery:
Produced by the Arellanes family in Santa Catarina Minas, Oaxaca, using traditional clay pot distillation, which enhances the spirit’s smoothness and complexity.
