San Balthazar Guelavila is a small town in the district of Tlacolula, right next door to other well-known distilling communities San Baltazar Chichicapam and Santa Catarina Minas. Don Gregorio “Goyo” Martinez’s Espadín grows at around 5,500 feet elevation on mountainous terrain in very fertile soil, composed primarily of limestone. The concentrated sugars result in a refined Espadín of great character and exceptional length, bolstered by Don Goyo’s carefully controlled natural fermentation. Outstanding technique.
Mezcal Nuestra Soledad is a celebration of the unique terroir and distillation traditions of six different, prominent distilling communities within the Valles Centrales region of Oaxaca, Mexico. Hand-selected by the iconic Cortés family of El Jolgorio fame, each palenque (distillery) crafts a distinctive mezcal from 100% Espadín agave using centuries-old indigenous Zapotec methods. The agave is sustainably cultivated, wood-fire roasted in an earthen pit, wild fermented in open-air vats and distilled in copper pot stills. Mezcal Nuestra Soledad showcases the villages of Santiago Matatlán (the “heart” of mezcal production in Oaxaca), La Compañía Ejutla, San Luis del Rio, San Baltazar Guelavila, Santa María Zoquitlán, and Lachiguí Miahuatlán.
