Palomo Espadin
Palomo Espadín is a well-balanced, artisanal mezcal that highlights the classic Espadín profile with a focus on purity and refinement. On the nose, it offers inviting aromas of roasted agave, white pepper, and citrus zest, complemented by subtle herbal notes, wet stone, and a light touch of smoke. The palate is crisp and smooth, showcasing flavors of cooked agave, green apple, and black pepper. It finishes clean and slightly smoky, with floral undertones and a hint of salinity.
Crafted from Espadín (a. Angustifolia) in Oaxaca, this mezcal is produced using traditional methods. The agave is roasted in an underground stone pit fueled by mesquite and oak, then crushed with a tahona. Fermentation takes place in open-air wooden vats using wild yeast and natural spring water, followed by double distillation in copper pot stills.
