Lechuguilla Parejo Cenizo from 4th generation maestro vinatero Juan Fernández is made in Madera, Chihuahua using wild maguey Cenizo.
This region is known for its coniferous forests, humid summers, and cold yet dry winters. Agaves take approximately 15 years to reach maturity. The agaves are roasted for 3 days in a pit oven, and then crushed using a mechanical shredder. They are fermented for 7 days and then distilled in a stainless steel alembic still.
Look for aromas of wet slate, jerky, and ripe papaya. Tasting notes include salt water taffy, watermelon, and flint.
