Romel Garcia who is a master lechuguilla distiller in the region of Las Tunas in Chinipas, Chihuahua. In the This is made with Agave Bovicornuta which is found surrounded by lemon and papaya trees, more in a tropical setting leading to more of the fruitier flavors.
Chinipas is a small community that neighbors the state of Sonora and sits at around 440 meters above sea level. Lechuguilla is an agave spirit category that is native to the regions of Chihuahua and Sonora. This specific region is fertile land for lemon, papaya and other tropical fruits which encompass the terroir and flavors that surround the agaves. The agaves that grow in the region are Bovicornuta, Shrevei, Vilmoriniana, Polianthiflora and Angustifolia.
Romel works with wild agaves from around the region and collects mature plants, he mills them with a mallet and lets them ferment in stone vats from 5 to 8 days. Afterwards, he distills in stainless steel pots with wooden tops. After double distillation, the finished lechuguilla will be in the range of 45 and 52 ABV.
